Pumpkin Smoothie Bowl Recipe (grain-free and vegan!)

Pumpkin season is here! 

I am definitely that person who is obsessed with pumpkin everything once October hits. Pumpkin bread, pumpkin rolls, pumpkin pie…you name it and I’m already putting a fork in it. The great thing about pumpkin is it also has amazing nutritional benefits like being a great source of Vitamin A, potassium, and fiber! I recently discovered these health benefits and decided to make a yummy fall smoothie that would fill me up without all the normal added sugars that are in a lot of pumpkin sweets.

The best thing about this smoothie is how quick it is. Throw all the ingredients in a blender and you’re basically done! Also, a lot of these ingredients are interchangeable so don’t be worried if you don’t have an exact ingredient!

Ingredients:

  • About 1 1/2 cups of pure pumpkin puree
  • 1/2 a frozen banana
  • 1 cup of unsweetened vanilla almond milk
  • 1 handful of chopped dates
  • 1/8 cup of chia seeds
  • 1 Tbsp of nutmeg
  • 1 Tbsp of allspice
  • 1 Tbsp of cinnamon
  • PaleoKrunch grain-free granola for topping
  • Pure honey to drizzle on top (take this out if you want a vegan version)

Directions:

Put all your ingredients in your blender and blend until it seems thick and smooth. Pour the smoothie into a bowl and top with granola, chia seeds, and drizzled honey! Other topping ideas are apples, blueberries, or any fruit of your choice ! I just didn’t have any fruit available when I made this but in the future I’ll definitely be adding apples.

  • I’m obsessed with those little (totally over-priced) acai packets from Trader Joes but this, this just turned smoothie bowls into my stereotypical fall dreams. If I hadn’t already climbed into my cozy bed for the night… I’d totally be running to the grocery store for the ingredients.
